Superfood salmon with herby hemp potatoes

Looking for some dinner inspiration? Try this heart healthy salmon packed with good fats as discussed in yesterday's post..


Ingredients:

For the salmon- 1 fillet per serving, garlic (granules or fresh), squeeze of lemon juice, salt and pepper

For the potatoes- Chose your desired potato variety and required amount,1tbsp each of basil, thyme, parsley, garlic, 1tsp olive oil, 1tbsp shelled hemp ( I used Linwoods) and an extra squeeze of lemon juice

Green veg to serve- I used broccoli and garden peas.

Method:

Chop your potatoes into approx 2cm rounds or cubes and then bring a pan of water to the boil. Add the potatoes to the water and allow to simmer for 10-15 mins until softened.

Sprinkle the salmon with the garlic, salt, pepper and then the lemon juice. Place on a wire rack ready to be grilled. Grill for approx. 15 mins, turning on its side half way- cooking times will vary depending on the size of your fillet!

Add the herby potato ingredients into a small dish and mix to combine.

Prepare your green veg and cook per instructions.

Drain the potatoes and then place back in the pan. Add the herby mixture to the pan and lightly crush with a fork or masher. You may wish to have the pan on a low heat at the point.

Remove the salmon from the grill and serve with the potatoes and vegetables.
