Snackspiration series: Raspberry and PB rice cakes

So if you know me, you will know I LOVE anything peanut butter...anyone else guilty of just eating it off the spoon?! It's a store cupboard staple, as are rice cakes, so paired with some frozen berries (another kitchen essential) it's a great snack.

Chose your rice cake base- I love Kallo blueberry or Honey corn cakes, wholegrain, caramel, or even chocolate it that's your preference!

Next, mix frozen berries with 1-2 tbsp yoghurt or alternatively you can make a protein paste with a little protein powder and water. Spread this on top of your base then drizzle with your nut butter. Pip and Nut are best for drizzling! If you like your nut butter thicker then but this under the berry topping.


Other flavour combos and toppings include chopped apple and cashew nut butter, mashed banana, PB and cinnamon or dried fruit, chia seeds and honey.

Give it a go and mix it up!
