Snackspiration series: Weetabix protein blondies

Weetabix aren't just for breakfast, they can be made into a tasty high protein snack too! So dust off that box in the back of the cupboard and get baking!


Ingredients:

60g weetabix (this was 3 of the protein biscuits but brands may vary!)

200mls milk (I used soy but any type is fine)

30g smooth peanut butter (I used Pip and Nut )

1-2 scoops of vanilla vegan protein

1tbsp sweet freedom vanilla syrup or honey /maple syrup

1tsp baking soda

40g frozen berries


Method:

Crumble the Weetabix into a bowl then add in the protein powder and baking powder. Stir in the milk, syrup and peanut butter to combine.

Depending on your type of protein powder you may need to add more/less powder or milk to gain a thick mixture. Add in the frozen berries and gently mix.

Pop in a lined loaf tin and bake for 20-30 mins 180-200 degrees/ gas mark 7 checking half way. The blondies should be nice and firm.

Place on a wrack to cool and slice in to 6 before enjoying!

Macros per slice 145 kcals 12g Carbs, 14g Protein, 4g Fat
