Snackspiration series: Caramel protein slice

An indulgent sweet treat with an additional protein boost!

Ingredients:

-Base:

20g coconut flour

20g oats

30g vanilla vegan protein (I used Sci-Mx)

15g honey

60mls soy milk

An optional sprinkle of cinnamon

-Caramel layer :

40g peanut butter

15g honey

Approx 30mls soy milk

- Topping:

30g dark chocolate

5g coconut oil

1tsp highlights hot chocolate powder/ cacoa/cocoa powder -

Method:

Add all the dry base ingredients into a bowl and then add the milk and honey, stirring to combine until a slightly wet “dough“ is formed . Add more liquid if required. Press into the base of a container and place in the fridge to set.

Meanwhile, make the caramel. Add the peanut butter and honey to a bowl and heat on low for 30 secs in the microwave to melt. Stir in the milk until it resembles a gooey caramel consistency . Remove the base from the fridge. Gently spread over the base and pop back into the fridge.

Next, make the topping. Melt the chocolate and coconut oil in a bowl in the microwave for approximately 30 seconds and then stir in the chocolate powder to thicken it slightly. Drizzle over the caramel base and then place back in the fridge to set... which is thankfully only around an hour or you can put it in the freezer if you can't wait that long!
